Aromatherapy Tomato Basil Onion Salad

Aromatherapy doesn't just mean a special type of massage. The benefits of this wonderful treatment come from a combination of touch and smell. This mood-boosting salad assaults your olfactory senses with the pungency of onion and the heavy, sweet scent of basil. You'll hardly have to eat it to feel better.
  • 6 ripe organic tomatoes, the freshest and the best you can buy
  • 1 large red onion
  • 1 generous bunch of fresh basil
  • 4 tablespoons extra-virgin olive oil
  • Freshly ground black pepper
  • Chunks of crusty, organic wholemeal bread
  1. Wash and thinly slice the tomatoes.
  2. Peel and thinly slice the onion.
  3. Wash and dry the basil.
  4. Layer the tomato and onion in a fairly large shallow dish.
  5. Pour on the olive oil.
  6. Tear the basil into small pieces and sprinkle over the top.
  7. Season with the pepper.
  8. Serve with the bread, making sure you leave a bit left over to mop up the succulent mixture of oil and tomato juices.
